PRODUCTION/BAKERY MANAGER

The position will lead from the picturesque Middlebury, Indiana in a kitchen designed for the most meticulous baker.

Position Description:
• Experienced commercial baker producing/manufacturing bread and cookies with an understanding of the various food markets and trends as it relates to fresh or parbaked breads.
• Tests and develops recipes and processes. Collaborates with functional groups such a Product Development to craft fresh artisan bread and other high quality fresh products to offer to consumers. Participates in the selection of equipment for process.
• Ensures the continuous improvement of the plant's Quality Control programs to meet all bakery quality objectives. This is to include process reliability, product quality, product standards, specifications and consumer complaint reductions.
• Directs plant-scheduling activities to provide superior customer service while controlling costs. Assures all materials and supplies are available and correct for production schedules.
• Monitors safety, quality, and sanitation standards to ensure compliance with established company standards.
• Provides administrative, technical, and/or specialized support to plant operations. Trains employees in all aspects of baking and manufacturing.
• Adheres to budget and cost control practices.
• Manages coordination of daily and weekly crewing for a facility of 40+ team members per shift, which includes production line and maintenance support.
• Determines collection of production data in collaboration with shift Team Leads to evaluate and analyze potential gaps.
• Directs contract resources to complete required work.

The ideal candidate should possess the following:
• Bachelors of Food Science and/or culinary certification preferred with at least 6 to 10 years of food/bakery manufacturing experience. Bakery training and experience required.
• Must have experience working in a Food Service Manufacturing environment. Experience starting new bakery plant or line would be helpful.
• Demonstrated ability to define and solve problems, collect data, establish facts, and draw valid conclusions.
• Demonstrated knowledge of processing, packaging and quality standards required.
• Demonstrated ability to bring creative ideas to market deploying proven methodologies regarding which creative ideas will work and how these ideas will play out in the marketplace.
• Demonstrated ability to interpret a variety of technical information in mathematical and/or narrative form and deal with several abstract and concrete variables.
• Demonstrated ability to work well under pressure, given multiple projects and deadlines.
• Demonstrated leadership ability to create a climate in which people want to do their best; can motivate direct reports, invites input and provides appropriate coaching and counseling.
• Demonstrated ability to hire the best people available.
